Fermentation Culture and Arts Festival Kanazawa: A Journey to Sensing the Invisible

The 21st Century Museum of Contemporary Art, Kanazawa, is distinguished by its commitment to being a "community-engaged museum, co-created with citizens." Since its opening, the museum has collaborated with various organizations, including citizens and industry groups, to develop new museum activities rooted in the local community.

In this 20th anniversary year, the museum is partnering with the "Fermentation Tourism Kanazawa Executive Committee," composed of fermentation experts, local brewers, and companies involved in tourism and urban development, to host a new "Cultural Arts Festival" that connects art, fermentation culture, and walking tours.

Japan is renowned for its fermentation culture, including soy sauce and sake. In particular, the Kanazawa and Ishikawa regions are home to unique fermentation traditions fostered by the sea, such as "Kabura-zushi," where yellowtail is sandwiched between turnip and pickled in rice bran, and "Fugu no Ko," pufferfish ovaries detoxified by being pickled in rice bran. This region is rich in centuries-old brewing houses that have preserved these traditions.

The festival will explore the unseen world of fermentation through the collaboration of brewers and artists, inspired by the microorganisms responsible for fermentation, the natural elements that produce delicious fermented foods, and the memories of people who have lived through centuries of history, war, and disaster.

The museum and the executive committee will jointly host the event. The museum will use its project workshop as a venue, while the committee will hold activities in local breweries (installation sites). The museum's project workshop will feature panels and videos introducing Ishikawa's fermentation culture, serve as an information center for walking tours, and sell fermentation-related products.

Meanwhile, local breweries will exhibit artworks created in collaboration between brewers and artists, focusing on the theme of fermentation. Visitors will start at the museum and then tour the installation sites at various breweries.
